Encouraged to Snack

I gave two nutrition talks this week: one on eating for healthy joints and one on nutrition for new mothers. Quite different topics, but as I thought about the snacks I wanted to make to bring for my audiences, I decided to do the same one for both. These Brazil Cacao Bites are ideal as a quick, on-the-go snack, whether you’re trying to reduce inflammation in your body or are busy with a new baby.

Yes, I’m encouraging you to snack. While most fad diets insist that you eat only three meals a day (or worse, replace a meal with a shake or drink), I’d argue that the key to a healthy diet is preventing blood sugar spikes and dips. The only way to do that is through regular snacking and preparing for that with wholesome goodies like these bites.

The best part of all is that they have FIVE ingredients and take no time at all. A food processor is required, but other than that, no fancy equipment or gadgets are necessary. And no baking! You can look after yourself even when you’re short on time.

When it comes to the ingredients, look for the best you can find. After all, there are only a few components here, so you may as well make sure they’re high quality. Fresh medjool dates will be tastiest here, but dried work well too - just make sure and soak them for about an hour beforehand to soften them up. Choose organic brazil nuts if possible, as well as raw cacao nibs and unsweetened currants. If you can’t find currants, unsweetened raisins would be a fine substitution.

Make these when you have a few spare minutes and store them in an airtight container in the fridge for anytime access to a wholesome snack. Bring them with you on your way out of the door for the day - they make an ideal snack for the workplace.

Brazil Cacao Bites

Ingredients (12-15 bites)

  • 1 cup organic brazil nuts
  • 1/2 cup dates (if dried, soak for 1 hour and drain)
  • 1/3 cup currants
  • 1/3 cup raw cacao nibs
  • 1/4 tsp sea salt

Instructions

Combine all ingredients in a food processor and blitz until it starts to stick together.

Remove by the spoonful and roll the mixture between your palms to create a smooth ball. Place in an airtight container and refrigerate for 1 hour.

Keep for up to a week in the fridge.
